Sharpening steel

Sharpening steel is a historical tool, but even today professionals who have to work with knives and keep them sharp can't do without. It is not used to create blades on the knife, but to maintain them - this is called pulling.
The basic rule in choosing sharpening steel is that it must be made of a material that is harder than the knife with which it will be used. If not, the knife would not only damage the steel but especially its blade would not improve. The second important rule is that the sharpening steel should be longer than the knife being pulled. Finally, professionals recommend that both the knife and the sharpening steel should be from the same manufacturer.
So if you buy some of the knives from the Ruby set, you should consider buying the sharpening steel from the same collection. But our offer is much wider in terms of price, material and shape. While Ruby is oval, other sharpening steels have a circular cross-section so you can choose the version that suits you best or one that you are already used to.
Of course, as with every craft, working with a steel plate also requires a lot of instructions and procedures. The ideal is to find someone experienced to get you into pulling knives and advise you how to avoid basic mistakes - that you do not maintain the same angle along the blade or you manage to curl the blade and create teeth on it.
